Bacon, Egg & Tomato Toasted Wrap

Instructions

Step 1
1. Prep the bacon by slicing into small pieces and then prep the veg by dicing the onion and slicing the cherry tomatoes into quarters.
Step 2
2. Add the bacon into a medium hot pan and stir and fry for a few minutes before adding in the onion and tomato.
Step 3
3. Add the seasonings and continue to stir and fry for a further 3-4 minutes.
Step 4
4. In the mean time, whisk the egg and egg white together.
Step 5
5. Pour the egg mixture into the pan and tip the pan around to make an even egg mixture.
Step 6
6. Press the wrap down into the pan to stick to the egg mixture in the pan.
Step 7
7. Then flip like a pancake or use a plate to flip over to the other side.
Step 8
8. Whilst the wrap is toasting, sprinkle the Parmesan cheese down one side along with the basil leaves.
Step 9
9. Leave to toast for a few minutes and then fold in half before serving.
