Zucchini Waffles with Fried Eggs

Instructions

Step 1
To make waffles, toss zucchini and salt in a bowl. Transfer to a colander over a bowl and stand for 10 minutes. Squeeze as much liquid out as possible and transfer to a large bowl.
Step 2
Preheat a waffle iron, or alternatively this mix can also be made into pancakes.
Step 3
Add mint, cheeses, egg, flour and baking powder to zucchini, season with salt and pepper and mix well to combine.
Step 4
Divide mixture into 4, spoon into waffle iron and cook for 4-5 minutes until golden. Set aside in a warm place and repeat with remaining mixture.
Step 5
Whilst cooking the last waffle, heat a medium non-stick frypan over medium heat and cook eggs for 2 minutes, or until cooked to your liking.
Step 6
Place a waffle on each plate, add avocado, cooked eggs and spring onion. Season with salt and pepper and top with remaining waffles to serve.
