Ingredients

1 tablespoonghee
0.5onion
chopped
0.5red bell pepper
chopped
2Jalapenos
deseeded and finely chopped
2 teaspoonsminced garlic
1 teaspooncumin
1 teaspoonpaprika
1 teaspoonoregano
½ teaspoonchili powder
fresh lime juice
1can Rotel
undrained
3 cupschicken breast
shredded
5 cupschicken broth
salt
to taste
pepper
to taste
2zero carb tortillas
Instructions
Step 1
Melt the ghee in a pot over medium heat.
Step 2
To the pot, add the onions, peppers and jalapenos. Saute until tender.
Step 3
Add the minced garlic, chili powder, cumin, paprika, oregano, lime juice and salt and pepper to taste. Mix well.
Step 4
Add the Rotel and chicken, mix well.
Step 5
Finally, add the chicken broth and cover. Reduce the heat to medium low and simmer for 20 minutes.
Step 6
Heat the oven to broil.
Step 7
Place tortilla on a baking sheet, flipping it every so often until browned and crispy.
Step 8
Cut the tortillas into strips.
Step 9
Serve the soup with strips of tortilla on top.
