Step 1
Coat beef cubes with salt & pepper then toss in corn starch. In a heavy pot, add some oil and brown the meat, add chopped onion & garlic & celery and cook until translucent. Mix in dried herbs and tomato paste. Add 1 tsp Worcestershire sauce or balsamic vinegar + enough broth to cover. Bring to a boil then reduce to low to simmer for at least 1 hour. Add remaining veggies + more broth to cover, + additional salt and pepper to taste. Bring to a boil and reduce to low to simmer until veggies are cooked through and meat is tender, approx 1 hour. Add in gravy mix and stir until combined (optionally you can dissolve the gravy mix in a few tbsp cold water to avoid clumping).
Simmer until thickened. Serve over mashed potatoes, or on its own.
