Instructions
Step 1
Preheat the oven to 180 C. Lightly butter a large 3 litre ovenproof dish.
Step 2
Fill a medium - large heavy saucepan about 1/3 full with cold water and salt. Cover and bring to the boil.
Step 3
Meanwhile, trim the base and outside leaves from the cauliflower. Cut into florets and trim off excess stalk and slice into thin pieces. Add cauliflower to water. The water should just cover the cauliflower.
Step 4
Cover with lid and cook for about 3 minutes only - it will just be beginning to soften. Drain well in a colander and discard water. Rinse gently under cold water to stop the cooking process. Arrange cauliflower in the baking dish.
Step 5
Dry the saucepan. Melt butter in the saucepan over medium heat until foamy-do not burn. Add in flour and stir constantly for 2 minutes and cook until the mixture is a sandy colour. Remove pan from the heat.
Step 6
Add the milk all in one go and whisk in quickly. Put the pan back on the heat. Bring to the boil over medium low heat, stirring constantly until the sauce thickens and bubbles appear (will take approximately 3 minutes). Don’t stop stirring.
Step 7
Season well with the nutmeg a salt and pepper. Stir in about 3/4 of the combined cheese. Place back over a low heat and stir until the sauce is smooth and velvety.
Step 8
Pour sauce over the cauliflower and scatter over the remaining cheese.
Step 9
Bake for 25 minutes or until lightly golden.
