For the crumble

Step 1
Add flour sugar oats and cubed butter to a bowl then crumble with your fingers to make the crumble and set aside

Add the dry ingredients for the pancake batter in one bowl flour baking soda baking powder salt sugar and cinnamon and whisk to combine

Step 3
Mix the wet ingredients for the pancake batter in another bowl - eggs melted butter vanilla and buttermilk then pour the wet into the dry and mix until just combined . This will keep the batter fluffy when cooked .

Step 4
Grease a baking mold ( I use a burger bun mold as it makes perfect round pancakes ) add a ladle full of the mixture into each one ( makes 10) then add a tablespoon of chopped apple on each one and some crumble mixture . Bake at 200 c / 400 f fan setting for 15 minutes then serve as you like . I love caramel sauce and chopped nuts to finish . Enjoy
