Instructions
Step 1
Fry onions in olive oil till tender
Step 2
Add garlic, ginger and coriander and cook till fragrant
Step 3
Add curry paste and cook for a bit
Step 4
Add all other ingredients besides sugar and lime juice
Step 5
Bring to simmer and cook for as long as you feel like - I usually let it sit for about an hour
Step 6
Add sugar, spinach and lime juice and mix well
