Instructions

Step 1
Preheat the oven on 200°C.
Step 2
Cut the squash in a half, remove the seeds and place it on a baking tray.
Step 3
Add tomatoes, onion, garlic, olive oil, salt and pepper.
Step 4
Bake it for 30-45 min till the squash is ready. You can try it with a fork if it’s already soft.
Step 5
As soon as it’s ready, take the baking tray out of the oven and put everything in a blender. Add coconut milk and mix it well.
Step 6
Fill it in a plate and optional top it with pumpkin seeds.
