Instructions

Marinade

Step 1
Using a mortar and pestle, add garlic, thai chili, scallions, sugar, and pound to a paste.

In a medium bowl, combine mixture and soy sauce, then pour over cubed beef.

Set beef in refrigerator for 30 minutes to marinade.

Stew

Step 4
Cut potatoes, carrots and onions into chunks.

In a large pot, stir fry the marinaded cubed beef in cooking oil under medium rare.

Add water, stalks of lemongrass, potatoes, carrots, onions and chili sauce. Bring to a boil over high heat for 10 minutes.

Reduce to low heat and add hot dogs (1" chuncks) and cornstarch to thicken. Allow to slow cook on low for 30 minutes. Adjust flavor with salt and pepper as desired.
