3 lbsbeef stew meat
1 inch cubed
½ tspsalt
1 tspblack pepper
1 tspgarlic powder
1 tspchicken bouillon powder
3 tspfive spice powder
1 Tbspminced garlic
1 Tbspsugar
2 Tbspsoy sauce
For the stew:
Instructions
Step 1
First, marinate the beef cubes with salt, pepper, garlic powder, chicken bouillon powder, garlic, sugar, five spice powder, and soy sauce. Cover and refrigerate for 1 hour.
Step 2
In a deep pan, add oil, garlic, onion, lemongrass, ginger and paprika and sauté until fragrant. Push aside and add another spoon of oil and sear the beef until it starts to turn brown on both sides. Add cinnamon stick, star anise, bay leaves and tomato paste, then pour in chicken stock, coconut water. Cook on high heat and let this come to a boil then cover with the lid and reduce the heat and simmer for about 90 minutes. Add potatoes and carrots and cook until fork tender, about 20 minutes.
