3 lbsbeef stew meat
1 inch cubed
½ tspsalt
1 tspchicken bouillon powder
1 tspblack pepper
3 tspfive spice powder
1 Tbspminced garlic
2 Tbspsugar
2 Tbspsoy sauce
2 Tbspoil
1 Tbspgarlic
4 piecesginger
sliced
3 stalkslemongrass
bruised and cut to 2 inch pieces
1yellow onion
sliced
1stick of cinnamon
4star anise
1 tsppaprika
2 canschicken broth
or beef, can
12 OzCoconut water
4 Tbsptomato paste
3bay leaves
2 cupspotatoes
2 cupscarrots
Instructions
Step 1
First, marinate the beef cubes with salt, chicken bouillon powder, black pepper, five spice powder, minced garlic, sugar and soy sauce. Cover and refrigerate for 1 hour.
Step 2
In a Dutch oven pot, add oil, garlic, ginger, lemongrass, onions and paprika (forgot to mention in my voiceover!) Cook for a couple minutes until fragrant. Add another spoon of oil and quickly sear the beef until it starts to turn brown. Add cinnamon stick, star anise and tomato paste, then pour in chicken stock, coconut water and add the bay leaves. Cook on high heat and let this come to a boil then cover with the lid and reduce the heat and simmer for about 90 minutes. Add potatoes and carrots and cook until fork tender, about 20 minutes.
