MEXICAN MEAL PREP FOR WEIGHT LOSS: PUERCO CON NOPALES EN SALSA ROJA 🇲🇽 This is one of my favorite dishes and it only requires simple ingredients! It’s so low calorie you can add toppings or a side of choice! I love to add frijoles, non fat Greek yogurt, avocado, or some queso fresco!

Instructions
Step 1
1. Boil tomatoes, chiles, 2 garlic cloves, and 1/4 of the onion for 8-10 minutes.
Step 2
2. Once done, blend the rest of the boiled vegetables with low sodium chicken bouillon, 1/2 cup water from the chiles, and seasonings to taste. Put to the side.
Step 3
3. Add nopales, 2 garlic cloves, tomatillo leaves, 1/4 onion and 1 tbsp salt to a pan.
Step 4
4. Cook for 10-13 minutes, stirring often. The nopales will release “baba” (slime) as they cook. Turn off the heat when they have changed to a dark green color.
Step 5
5. Remove the garlic and onion. Rinse the nopales under cold water until there is no “baba.” Put to the side.
Step 6
6. Slice the remainder of the onion into strips and pork into bite size pieces.
Step 7
7. Grease a pan and cook the pork on high heat for 10 minutes. Season with salt and pepper. The pork will release liquid. Remove it if it does not evaporate.

8. Add sliced onions and cook for 3 minutes.
Step 9
9. Bring the heat down to a simmer and add nopales. Mix well before adding salsa.
Step 10
10. Cover and cook for 10-12 minutes and add additional seasonings if needed.
Step 11
11. Divide into 4 servings. Each serving is 1.5 cup of guisado and .75 cup frijoles.
