1lemon juiced

to taste
pepper

fresh coriander

Cooked, for serving
Instructions
Step 1
1. Preheat your oven to 200'C.
Step 2
2. In a large bowl, mix olive oil, za'atar, lemon juice, salt, and pepper. Add chicken thighs and
vegetables, tossing to coat them evenly with the spice mixture.
Step 3
3. Spread the chicken and vegetables on a baking sheet in a single layer.
Step 4
4. Roast for about 20-25 minutes until the chicken is cooked through and the vegetables are tender and lightly browned
Step 5
5. Serve over cooked couscous and garnish with fresh coriander.
