Kale and Farro Harvest Salad with Maple Dijon Dressing

Ingredients
4 servings

1 headkale
shredded

2shallots
thinly sliced

1 cupfarro

1sweet potato
large, cubed

3chicken breasts

1apple
chopped

crumbled goat cheese

sea salt

pepper
Spice mix
Salad dressing
Instructions
Step 1
Preheat oven to 425 degrees.
Step 2
Cook farro according to directions. I always cook grains in chicken stock.
Step 3
Add sweet potatoes to a lined baking sheet with a drizzle of olive oil and some of the spice mix (measure with your heart). Roast in oven for about 20-25 minutes or until the potatoes are tender and start to char.
Step 4
Drizzle chicken with olive oil and rub in. Season chicken with spice mix. Add to lined baking sheet and roast for 15-20 min or until internal temp is 165 degrees. Cut into cubes after slightly cooled.
Step 5
Make dressing
Step 6
Add kale to bowl with a TBL of dressing and massage. Add the rest of the ingredients and serve!
