Instructions
Step 1
Heat olive oil in medium saute pan over medium heat.
Step 2
Saute diced red pepper until soft.
Step 3
Add spinach and toss to wilt. Remove from heat and let cool slightly.
Step 4
Preheat oven to 325. Line 12 cup muffin tin with silicone liners.
Step 5
In a medium bowl, whisk eggs and egg whites. Add milk, skyr, salt, and salt; whisk to blend.
Step 6
Stir in cheese and cooled vegetables.
Step 7
Using a 1/4 cup measuring scoop, distribute mixture between the 12 muffin cups to approximately 1/4 inch from top of liner.
Step 8
Bake for 25 minutes or until centers are set but still moist looking.
Step 9
Cool in pan for 10-15 minutes before removing.
Step 10
Egg bites puff in the oven, then deflate upon cooling.
