Step 1
Roughly chop the garlic then clean and slice the brown mushrooms . Slice the chanterelles into smaller pieces then set aside . If you don’t have these mushrooms don’t worry use 500 grams of any mixed mushrooms !

Add a little olive oil to a pan then on medium heat sauté the garlic two minutes .

Add the mushrooms then cook about 4 minutes on medium high to cook off some of the moisture inside the mushrooms . Season lightly with salt and generously with black pepper then add two heaping tablespoons of butter and the shoyu soy sauce and simmer

Step 4
While the mushrooms are simmering get the spaghetti into salted boiling water and cook until all dente . Then Toss into the mushrooms add a little pasta water and stir to combine . To serve add freshly chopped parsley . Enjoy
