Instructions
Step 1
In a large bowl, add yeast to warm water (110-120°F). Stir and allow to sit for 5 mins.


Step 2
Heat oven to lowest temperature (<200°F) and then turn off oven.
Step 3
Combine sugar, salt, flour, and oil with water and yeast into dough. Knead into ball and cover bowl with plastic wrap. Put into oven (oven off) to rise.




Step 4
Prepare ingredients (slice or shred cheese, slice sausage, etc)
Step 5
After dough has risen for at least 20 mins, take out a portion of dough to knead and roll out. Use flour as needed.
Step 6
Cut dough into pieces that could fold into a tupperware container. Mark halfway point and cut vents.
Step 7
Stack calzone with pepperoni, sausage. cheeses, and marinara sauce. Preheat oven to 385°F.









Step 8
Fold dough over. Make sure to pinch seams to make a seal, then roll edges up and pinch again.
Step 9
Place calzone on a greased sheet pan.
Step 10
Create an egg wash by beating egg, punch of salt, and a bit of water. Brush all calzones.

Step 11
Bake for 20-25 mins. 20 mins on a medium rack and 5 mins on the top rack.
