Step 1
Preheat oven to 375°F. Line 12 muffin cups with paper liners, or spray cups with cooking spray.
Step 2
2 Stir together flour, baking powder, cinnamon, and salt in a large bowl. Whisk together milk, oil, and honey in a separate bowl. Make a well in center of flour mixture and fold in milk mixture until just moistened. Fold in apple and walnuts (if using). Beat egg whites with an electric mixer until stiff peaks form, then gently fold into flour mixture.
Step 3
3 Fill muffin cups two-thirds full and sprinkle with sugar (if using). Bake until lightly browned and a toothpick inserted into center of a muffin comes out with a few moist crumbs attached, about 20 minutes. Remove muffins from tin and transfer to a wire rack to cool completely.
