Beef marinade

4 tspoyster sauce

2 tspcaster sugar

2 tspfish sauce

1 tspgarlic
finely grated

2 tspkecap manis

½ tspblack pepper
grounded

½ tspbicarbonate of soda

1 tspcanola oil
Lime pepper dipping sauce
Instructions
Step 1
Marinate beef - mix the beef marinade ingredients together in a bowl, then add the beer and mix to coat. Cover and refrigerate for 24 hours (up to 48hrs) Drain the beef in a colander set over a bowl, reserving the marinade. Measure out 2 teaspoons of the marinade and set aside.
Step 2
Dipping sauce - mix the ingredients together in a small bowl. Set aside
Step 3
Cook beef - in a large non-stick frying pan, heat the oil over high heat. Once smoking, add the beer. Toss for 2 1/2 minutes using the wooden spoons. Add the reserved 2 teaspoons of marinade, then shake the pan for another 30 seconds until the beef is caramelised on the outside (3 minutes total cooking time)
Step 4
Rest and serve - immediately tip the beef out onto a serving plate. Rest for 3 minutes then serve with dipping sauce.
