Instructions

Step 1
Start by peeling and dicing the onion and garlic. Set them aside.
Step 2
In a large pot, add the beef chuck and enough water to cover it. Bring it to a boil, then reduce the heat to a simmer. Skim off any scum that rises to the surface.
Step 3
After about 30 minutes, add the diced onions and garlic to the pot. Continue simmering for another 30 minutes or until the meat is tender and easily falls apart.
Step 4
While the meat is cooking, peel and chop the potatoes and carrots into bite-sized pieces. Shred the cabbage into large strips.
Step 5
Once the meat is tender, add the potatoes, carrots, and peppercorns to the pot. Cook until the vegetables are soft and cooked through.
Step 6
Finally, add the shredded cabbage, fish sauce, and salt to taste. Let it simmer for a few more minutes until the cabbage is wilted.
Step 7
Serve the Beef Nilaga hot in bowls, making sure to include pieces of tender beef, vegetables, and flavorful broth.
