Slow cooker- Portion Control Chicken Noodle Soup

Ingredients
2 servings

1.5 lbsboneless skinless chicken breasts

5carrots
medium, peeled and chopped

1yellow onion
medium, chopped

4stalks celery
chopped

3 clovesgarlic
minced

3 Tbspextra virgin olive oil

6 cupslow-sodium chicken broth cans

1 cupwater

¾ tspdried thyme

½ tspdried rosemary
crushed

½ tspdried sage
optional

salt
to taste

black pepper
freshly ground, to taste

2 cupswide egg noodles
uncooked

¼ cupfresh parsley
chopped

1 Tbspfresh lemon juice
Instructions
Step 1
Add chicken (un-cut), diced carrots, onion, celery, and garlic to slow cooker.
Step 2
Drizzle olive oil over top then add in chicken broth, water, thyme, rosemary, and season with salt and pepper to taste.
Step 3
Cover and cook on low heat 6 - 7 hours.
Step 4
Remove cooked chicken and allow to rest 10 minutes, then dice into bite size pieces.
Step 5
Meanwhile, add egg noodles and parsley to slow cooker.
Step 6
Increase temperature to high, cover and cook 30 minutes longer (or until noodles are tender).
Step 7
Stir in lemon juice and toss in cooked, diced chicken.
Step 8
Serve warm!
