These rusks include nuts & seeds - makes a big loaf - then the loaf is cut into 42 rusks and dried in the oven. One rusk is one serving - so the whole recipe is divided by 42 to get the calorie count per serving.

1.2kgwholewheat flour
stoneground
1 cupdark brown sugar
1 cuprolled oats
½ cupfine coconut
½ cupwhole almonds
raw
½ cupdried cranberries
½ cuppumpkin seeds
½ cupsunflower seeds
½ cupmilled flax seed
1 teaspoonbicarbonate of soda
2 teaspoonsbaking powder
1 teaspoonsalt
2eggs

0.5 pintbuttermilk
1 teaspoonvanilla essence
250gbutter

Instructions
Step 1
Mix all the dry ingredients together very well.
Add the melted butter.
Beat the eggs, vanilla & buttermilk together, and add.
Mix everything together very well - can add a little milk if too dry, or use your hands and kneed it together. Line an oven pan with baking paper and spread the dough evenly.
Bake for 35 - 45 min in moderate oven - about 170 degrees C.
Remove from oven, but leave in pan for a 8 - 10 hours to 'set'. If you removes sooner, this huge loaf will often break.
Carefully tip out and cut into 14 slices, and cut each slice into 3. Space them slightly apart and put them back into the oven to dry out. This will take about 8 hours at a lukewarm temprature - about 70 degrees. Once thouroughly dried out, like biscotti, put into an airtight container.
These rusks are delicious and will last for a long time - even months.
