Get spooky with these spicy kimchi deviled eggs! The rich, velvety egg yolk base is blended with finely chopped kimchi, delivering a complex flavor profile that includes the robust umami of fermented cabbage, a hint of heat from chili peppers, and a delightful tanginess. The addition of gochujang not only adds a fiery kick but a wonderful orange color to emphasize the Jack-O-Lantern look of these deviled eggs!

Instructions
Prepare the eggs:
Step 1
Place the eggs in a single layer in a saucepan and cover them with water. Bring the water to a boil, then reduce the heat to a low simmer and cook for 9-12 minutes. Remove from heat, drain, and immediately transfer the eggs to an ice bath to cool. This will help make them easier to peel.
Step 2
Gently crack the eggshells and peel the eggs. Slice each egg in half lengthwise.
Step 3
Carefully remove the yolks from the egg halves and place them in a mixing bowl. Set the egg whites aside.
Prepare the filling:

Chop the kimchi into small pieces using a food processor or chop into small pieces with a knife.
Step 5
Mash the egg yolks with a fork and then add the mayonnaise, chopped kimchi, gochujang, salt and pepper. Mix everything together until the filling is smooth and well combined. You can also blend the filling for a smoother texture.
Fill the egg whites:

You can either spoon the filling into the egg white halves or use a pastry bag to pipe it in for a neater appearance. If you don't have a pastry bag, you can use a ziplock bag with a corner snipped off.
Chill and Serve:

Refrigerate the deviled eggs for at least 30 minutes before serving to allow the flavors to meld. They can be served cold as an appetizer or snack.

If you want to turn these into little Jack O Lantern's, cut out little eyes and smiles using seaweed sheets and use small pieces of chives as the stems!
