Instructions

Step 1
Add the chicken, half the garlic, olive oil, lemon juice and zest, cumin, oregano, thyme, paprika, salt, and cayenne pepper to a bowl. Mix to combine and set aside to marinate for 5-10 minutes.
Step 2
In a separate bowl combine flour, 200g of the yogurt, and a pinch of salt. Knead to combine, cover with plastic wrap, and set aside for 5 minutes.
Step 3
Squeeze the grated cucumber through a couple pieces of paper towel to drain, removing as much of the water as possible. Add it to a bowl with remaining yogurt and dill, combine to create a tzatziki sauce.
Step 4
Add frozen fries to an air fryer and cook at 180 celsius for 12-14 minutes until golden brown. Season to your liking with salt, paprika, garlic powder, and cumin.
Step 5
Evenly divide dough into 3 balls and roll out to about 1-2mm thick before brushing them with olive oil, and frying in a pan on medium heat for 1-2 minutes per side or until golden brown. Take out a set aside, and cover with a tea towel until ready to use.
Step 6
Pam fry or barbecue the marinated chicken for roughly 3.5 minutes per side on medium-high heat to get a nice char and cook through. Slice chicken, and if it’s not cooked then add back to the pan. This will also get a nice colour on all sides.
Step 7
Assemble by laying down a piece of bread, smearing tzatziki, and adding sliced chicken, seasoned fries, then topping with tomato and red onion.
