Instructions

Step 1
Add the marinade ingredients to a blender and blend into a paste.
Step 2
De-vein the prawns and butterfly them.
Step 3
Add the marinade to a bowl add in the prawns and coat in the marinade. Leave them to marinade for at least 4 hours for best results Marinade overnight.
Step 4
Add the coating ingredients to a bowl and mix.
Step 5
Take the Prawns, one at a time out of the marinade and place in into the coating mixture thoroughly coat them, tap off the excess and rest on a plate.
Step 6
Once all the prawns have been coated leave them to rest on a plate while you heat the oil and Prepare the dipping sauce.
Step 7
Add the dip ingredients to a clean bowl combine and set aside.
Step 8
Once the oil has reached 160 degrees gently lower the prawns into the hot oil using tongs. Do not overcrowd the pan as the prawns will stick together and the coating will fall off. Cook the prawns for approximately 3 minutes being careful not to overcook, once cooked remove from the pan and allow to rest on a wire rack.
Step 9
Plate up, serve with a portion of the dip, lick you’re lips and enjoy.
