Follow our step-by-step cooking guide to create this soul-warming comfort dish with ease. We assure you it will be delicious. Notes: - Leftover soup may appear thick, resembling a paste when cold. Do not worry; when you reheat it, it will return to a liquid state. If needed, add water to achieve your preferred consistency. - There is no need to pre-soak the split peas since they are already split. - It's preferable to use homemade broth, or if using store-bought broth, exercise caution with the amount of added salt. If the store-bought broth is high in sodium, consider reducing the additional salt in the recipe. Taste the soup before adding more salt to ensure the right balance of flavors.

Instructions

Step 1
Prepare two pots, one medium and one large.
Step 2
In a medium pot, bring the broth and water to a boil. Once it reaches a bubbling boil, turn off the heat and cover the pot to keep it warm.
Step 3
In the large pot, sauté the bacon with a tablespoon of water and brown sugar until it turns a golden, crispy texture.
Step 4
In the meantime, chop all your veggies. Once the bacon is ready, add the onion, garlic, green onion, leak, celery, and split peas. Stir thoroughly and let the mixture sauté for about 4 to 5 minutes.
Step 5
Pour in the entire broth and season with ¼ spoon of salt and pepper to taste. Cover the pot and allow it to come to a boil on medium-high heat. After reaching a boil, reduce the heat, add cilantro, and let the soup simmer for approximately 40 to 50 minutes, stirring occasionally. This will allow the soup to thicken, and the peas to break down.
Step 6
If you desire a thicker consistency, you can extend the cooking time, adjusting the thickness to your liking. However, keep in mind that the soup will continue to thicken as it cools, so it's advisable not to over-thicken while cooking.
