A favourite recipe of ours to have as a side. Pairs well with lamb dishes. Can serve warm or cold.

Instructions

Step 1
Grate carrot
Step 2
Heat olive oil and butter in a saucepan
Step 3
Add grated carrot and cook for 3-5 minutes until softened
Step 4
Add chicken stock
Step 5
Add boiling water and bring to a boil in saucepan
Step 6
Add couscous and currants & mix
Step 7
Place baby spinach on top
Step 8
Turn off stove and cover with a lid. Let it rest for 5 minutes
Step 9
Fluff couscous with a fork & stir through spinach. Serve
