Lemon & Pepper Chicken with Potato Wedges

Lemon and pepper chicken legs are a tasty and easy-to-make dish that combines the zesty flavor of lemon with the boldness of black pepper served with crispy and flaky potato wedges.

Lemon & Pepper Chicken
4chicken leg quarters
¼ cuplemon peels
dehydrated
½ Tbspblack pepper corns
½ Tbspsmoked paprika
1 tspgarlic powder
1 tsponion powder
1 Tbspsalt
0.5 Tbspdry oregano
½ tspcumin
1 Tbspginger & garlic paste
2 Tbspbutter
melted

Instructions
Step 1
Take chicken legs with skin. After briefly rinsing off the chicken, use the half lime cut and its juices to scrub the surface of each individual piece of chicken. This helps to remove the slime and film off the chicken and rinse off each individual piece under running water. Dry the chicken using paper towel.
Step 2
Take whole lemons and after you thoroughly clean the lemons, peel them clean.
Step 3
Make sure you're not peeling off a lot of the white and spongy part called the PITH. It's bitter and we don't want that.
Step 4
You can use oven method of Lemon peels; Using a baking sheet lined with parchment paper spread the lemon peels out evenly and set your oven to 175 degrees for about an hour and a half until they are mostly crispy and have a tan color (not burnt)

Or use dehydrate method; Peel lemons and dehydrate peels at 60 C for about 6 hours.
Step 6
Cool completely then pulverize in small food processor with peppercorns and pulse until your desired consistency. I like mine to have a little flaky and rustic look.
Step 7
Place the chicken legs in a shallow dish or a ziplock bag and combine prepared lemon and pepper seasoning ,smoked paprika, onion powder, garlic powder, salt, cumin powder, dried oregano, ginger garlic paste, melted butter to marinate the chicken. Make sure the chicken is well coated. Let it marinate for at least 30 minutes, or overnight in the refrigerator for more flavour.
Step 8
First you can use oven; Start by preheating your oven to 400°F (200°C).Bake the chicken legs in the preheated oven for about 35-40 minutes, or until the chicken is cooked through and the skin is crispy and golden brown.Once the chicken legs are cooked, remove them from the oven and let them rest for a few minutes before serving.
Step 9
Second for grill ; Preheat your grill or stovetop grill pan over medium-high heat or you can also cook the chicken in a skillet over medium-high heat. Once the grill is hot, place the chicken legs on it. Cook for about 14-15 minutes per side, or until the chicken is cooked through and no longer pink in the center. The cooking time may vary depending on the chicken.
Step 10
Or air fryer; I am using air fryer here, place the chicken legs in the basket and select option Roast at 170 c for 35 minutes. Insert the probe in the chicken legs to roast to perfection.
Step 11
Wash the potatoes thoroughly and pat them dry with a paper towel.
Step 12
Cut each potato into wedges by first cutting it in half lengthwise, then cutting each half into 2-3 wedges, depending on the size of the potato.
Step 13
Rinse with cold water to remove excess starch. Then place in a heat proof bowl and pour hot boiling water and leave in for 5-6 minutes.
Step 14
Drain and give them a shake in the colander. Sit and rest to steam dry for at least 5 minutes, but preferably until they stop steaming. The longer the better
Step 15
Meanwhile, in a small bowl combine olive oil,paprika , garlic powder, thyme & salt, cayenne pepper and black pepper.
Step 16
Add the potato wedges to the bowl and toss them in the oil and spice mixture until they are well coated.
Step 17
Sprinkle in freshly grated parmesan and give a gentle toss. Don't overmix the parmesan or it'll clump up with the seasoning and fall off the wedges.
Step 18
You can oven bake these; Preheat your oven to 425°F (220°C).Arrange the potato wedges in a single layer on a baking sheet lined with parchment paper or aluminum foil.Place the baking sheet in the preheated oven and bake for about 30-35 minutes, or until the potato wedges are golden brown and crispy. Flip them halfway through the cooking time to ensure even browning.Once the potato wedges are cooked, remove them from the oven and let them cool for a few minutes before serving.
Step 19
Or air fryer; Place 1/2 of the potato wedges in the basket of the air fryer at 180 c and cook for 10-15 minutes and flip wedges with tongs and cook for an additional 5 minutes. Checking them fairly often towards the end to ensure then do not burn.
Step 20
Serve the lemon and pepper chicken with wedges on the side.You can also garnish with fresh herbs like parsley or thyme if desired. Enjoy your flavorful lemon & pepper chicken and crispy & flavorful potato wedges with your favorite dipping sauce, such as ketchup or sour cream.
