Instructions

Step 1
Marinate the Chops: In a mixing bowl, combine smoked paprika, cumin, coriander, oregano, minced garlic, and olive oil. Season with salt and black pepper. Coat the lamb chops thoroughly with this spice mix and let them marinate for at least 30 minutes. Step 2
Prepare the Weber: While the lamb is marinating, prepare the Weber for direct cooking by lighting the coals using the Chimney fire basket. Once the coals are ash-covered, divide them between the two charcoal baskets and position them on opposite sides of the Weber for indirect grilling. Ensure the Weber's temperature is around 180°C - 200°C using the hand-held thermometer. (Devices/Utensils: Weber, two charcoal baskets, Chimney fire basket, hand held thermometer)
Step 3
Grill the Chops and Lemons: Place the marinated lamb chops in the center of the Weber's grate, between the two charcoal baskets for indirect grilling. Grill for about 5-7 minutes each side or until they reach your desired level of doneness. Prepare Charred Lemon Herb Sauce: Once the lemons are charred, squeeze the juice into a bowl. Add chopped parsley, mint, olive oil, and honey. Mix until well combined.
