Chicken Marsala
Instructions
Step 1
Cut the chicken breasts in half into cutlets, so that you have two thin slices for each breast.
Step 2
To a shallow bowl or pie pan, combine the flour, salt and pepper.
Step 3
Heat a large skillet over medium-high heat, and spray with olive oil.
Step 4
Dredge both sides of the chicken cutlets in the seasoned flour, shaking off the excess.
Step 5
Add the cutlets into the pan and fry for 4-5 minutes on each side until golden brown. Remove the chicken to a large platter.
Step 6
Lower the heat to medium and add the mushrooms and sauté until they are browned, about 5 minutes.
Step 7
Pour the Marsala wine in the pan and boil for a few seconds to cook out the alcohol.
Step 8
Add the chicken stock and simmer for a minute to reduce the sauce slightly.
Step 9
Stir in the butter and return the chicken to the pan. Cook for 2-3 additional minutes to heat the chicken through.
Step 10
To each plate add one chicken cutlet, spoon over mushrooms and sauce. This easy chicken marsala sauce goes great with mashed potatoes or pasta.
