Pork and Poblano Flautas

Ingredients

1 ozcream cheese
2 ozsour cream
1 Ozcotija cheese
grated
6flour tortillas
small
1poblano pepper
1lime
cilantro
2 tspchili and cumin rub
1.75 Ozfire-roasted diced hatch green chile peppers
10 ozground pork
Instructions
Prepare and Make Crema
Step 1
Halve Lime. Cut one half into wedges and juice the other half.
Step 2
Mince cilantro
Step 3
Stem poblano, seed, and cut into 1/2” dice.
Step 4
In a bowl, combine sour cream, 1 tbs lime juice, cilantro, and a pinch of salt. Set aside. (Reserve some cilantro for garnish)
Filling
Step 5
Place a large nonstick pan over medium-high heat. And ground pork to hot, dry pan and stir occasionally, 2 minutes
Step 6
Add poblano, chile and cumin rub, 1/4 tsp salt. And a pinch of pepper. Stir occasionally until poblanos have softened and no pink remains on pork, 6-8 minutes.
Step 7
Stir 2 tbsp water, green chiles, and softened cream cheese into hot pan. Bring to a simmer.
Step 8
Once simmering, stir occasionally until combined and creamy, 1-2 minutes. Remove from burner.
Assemble and Finish
Step 9
Place tortillas on a clean work surface.
Step 10
Divide filling evenly among tortillas, placing in center of each. Tuck one tortilla end under filling and roll tightly, placing seam-side down.
Step 11
Wipe pan clean and reserve.
Step 12
Return pan to medium heat and add 2 tsp olive oil. Place flautas in hot pan, seam-side down. Cook until browned on one side, 2-3 minutes.
Replenish oil if necessary. Gently roll to opposite side and cook until browned.
Remove from burner.
Step 13
Garnish with crema, cotija, and cilantro.
Squeeze lime wedges over taste.
