3Red Chilli’s
1red onion
2Lemongrass Sticks
4garlic cloves
1 tspshrimp paste
3 Tbspfish sauce
½ tspCinnamon Powder
1 tsppalm sugar
½ tspsalt
½ tsppepper
2 tspcumin powder
1Ginger root

10gFresh Coriander stalks
2 tspcoriander powder
1kgBeef Cubes
400mlcoconut milk
200mlwater
2 Tbspcornflour
2 Tbspvegetable oil
½ tspsalt
1 tsppepper
400gBaby Potatoes

Instructions
Step 1
Chop up the paste ingredients add to a blender blend into a paste and set aside.
Step 2
Add the beef cubes to a bowl sprinkle the cornflour over the beef and coat each piece.
Step 3
Heat a large skillet, or frying pan on high heat and add in the vegetable oil. When the oil is hot add in the beef and leave for 2 minutes before stirring. Keep stirring until the cubes are brown.
Step 4
Reduce the heat and add in the paste, coat the beef in the paste and leave it to cook for 3 mins while constantly stirring.
Step 5
Remove the pan from the heat and add the coated beef into the slow cooker.
Step 6
Add in the coconut milk and the beef stock, salt and pepper and stir well.
Step 7
Allow to cook for 4/5 hours depending on the cut of beef. Once the beef is tender add in the potatoes and cook for another 30 minutes or until the potatoes are cooked.
Step 8
Sprinkle in the chopped Coriander leaves stir and serve.
Step 9
Serve on a bed of rice and garnish with chopped coriander, lick you’re lips and enjoy.
