This is a super easy meal to make for breakfast with some asian inspiration. 1 serving, simple and filling. Its eggs, spinach, cheese, and onions over rice and flavored with siracha mayo.

Step 1

You start by prepping 1/2 cup of rice, and when that's done cooking you move on to the main part of the meal.
Step 2
Add your eggs to a buttered pan set to medium-low. As this is cooking, break the yolks and sprinkle in the shreaded cheese.
Step 3
If using onions, add them now.
Step 4
Right before the eggs are cooked to your preference, add in the spinach and remove from heat once the spinach is properly incorporated.
Step 5

With the good stuff done being cooked, put your now cooked rice and toppings in a bowl together. Add siracha mayo, and flavor to taste.
