Instructions
Step 1
Begin with separating the egg yolks from the whites.
Step 2
Place the yolks into a mixing bowl, pour in the milk and whisk together.
Step 3
Sift the flour into the bowl and whisk until smooth. You can also add the vanilla extract here.
Step 4
In a separate bowl add the egg whites and (preferably using an electric whisk) begin whisking. Once they turn white, add a third of the sugar. Whisk again. Once it starts to thicken, add the second third. Keep whisking. Then finally add the last third and whisk until you have dry peaks (it's standing firm).
Step 5
Then add the egg whites to the egg yolks and carefully fold together (do not stir).
Step 6
Add the mixture to a piping bag.
Step 7
Place a pan on a low heat and add a little butter.
Step 8
Once melted, add the mixture to the pan making nice circular pancake shapes. Add enough to make them nice and thick.
Step 9
Drop in a tsp of water and put a lid on.
Step 10
After 5-6 minutes, remove the lid and carefully flip over. Leave for another minute or two and remove when golden brown on both sides.
Step 11
Serve with whichever toppings you like, I added a little butter, maple syrup and icing sugar.
