Instructions
Step 1
Cook pasta just shy of al dente.
Step 2
Melt butter in skillet. Add sausage and brown. Add red pepper flakes if you want it spicier. Once it is browned, break up sausage as much as possible.
Step 3
Add chicken broth, pasta water mixture to deglaze the pan and start to emulsify the sauce.
Step 4
Add cherry tomatoes and cook until just starting to wilt.
Step 5
Add cooked noodles and toss in sauce. Add spinach and handfuls of Parmesan until you reach the desired consistency. Add pasta water if the sauce needs to be thinned.
Step 6
Serve immediately with more Parmesan on top.
