Instructions
Step 1
Heat the oven to 180° and line a pan with baking paper.



Step 2
In a large bowl, whisk together the coconut oil and sugars. Add the egg, almond extract and lemon zest and mix.








Step 3
In a separate bowl, mix the flour, cinnamon, baking soda and salt.





Step 4
Add the dry mixture to the wet mixture and mix them until combined.
Step 5
Mix in the oats and the desired toppings.






Step 6
Prepare the cookies, arrange all over the pan and bake for about 15 minutes.

Step 7
Cool the cookies on the baking sheet for about 10 minutes.
