This is a great new way to eat Turkey ! Crispy light batter on the outside and juicy tender meat on the inside . I love mine dipped into curry sauce !

Step 1
Dice the turkey breast into small pieces then add to a bowl and season with salt and pepper to taste . Now massage the meat for about 5 minutes to tenderize it .

Step 2
Sprinkle 3/4 cup of the flour over the turkey then add a little more salt and pepper and coat the turkey in the flour

Add the remaining 1 cup of flour to a bowl then add salt pepper turmeric and whisk. Now pour in the ice cold water and whisk together. The batter should be a bit thick

Step 4
Use a spoon to dunk the turkey in the batter then lift out and drip into hot oil. The oil should be roughly at 160 c or 320 f . Cook for roughly 1 minutes making sure to rotate the balls so they are evenly cooked . If your turkey pieces were larger allow more cooking time . If the oil gets too hot then it down or add a drop more cold oil to bring down the temp. Once cooked drain on paper towels and sink into your favorite sauce . Enjoy
