Thanksgiving Turkey Egg Rolls

Instructions

Prepare the filling:

Step 1
Mix together the ground turkey, diced onion and seasonings until well combined. You want to mix the ground turkey until it becomes a smooth paste.

Assemble the egg rolls:

Step 2
Lay an egg roll wrapper on a clean surface with one corner facing you (diamond shape).
Step 3
Place a couple of tablespoons of the turkey filling in the center of the wrapper.
Step 4
Fold the corner facing you over the filling.
Step 5
Fold in the sides, and then roll the wrapper tightly away from you. Use the an egg wash (beat together 1 egg and 1 tbsp water; you can also use just water but an egg wash seals better) to seal the edge.

Fry the Egg Rolls:

Heat vegetable oil in a deep fryer or large, deep pan to 350°F (175°C).
Step 7
Carefully place the egg rolls in the hot oil, seam side down, and fry until they are golden brown and crispy. This usually takes about 3-5 minutes.
Step 8
Use a slotted spoon to remove the egg rolls from the oil and place them on paper towels to drain any excess oil.
Step 9
Serve the egg rolls hot with my miso gravy for the perfect Thanksgiving bite!
