Instructions

Meatballs

Step 1
Preheat oven to 450°F.
Step 2
Prepare a parchment-lined baking sheet. To a large bowl, add breadcrumbs, salt, pepper and milk. Stir thoroughly to combine, then allow to thicken for 2 min. Add beef and pork mix, then use your hands to combine mixture. Roll mixture into equal-sized meatballs.
Step 3
On the prepared baking sheet, arrange meatballs.
Step 4
Roast on the middle rack of the oven for 12-16 min, until browned and cooked through. Once cooked, remove from oven and set aside.

Soup

Step 5
Heat the olive oil in a large pot and sauté the onion, carrot, and celery for 7-8 minutes over medium heat. Add the garlic and continue to cook for another minute until fragrant.
Step 6
Next, stir in the crushed tomatoes, beef broth, and oregano. Bring to a boil, then lower the heat and simmer for 10 minutes.
Step 7
Add the pasta and continue to simmer for 10-12 minutes until al dente. Transfer the baked meatballs to the pot and stir in the fresh parsley and Parmesan.
