Cheesy sundried tomato steak roulade

Instructions

Steak pinwheels

Step 1
Preheat oven to 400
Step 2
Season the skirt steak on both sides with salt, pepper and garlic powder.
Step 3
Spread Boursin cheese all over one side of steak
Step 4
Place julienned sundried tomatoes on top of cheese
Step 5
Tightly roll the skirt steak making sure you are rolling from the long side. (If you roll from the short side the meat will take forever to cook through). Secure steak roll with toothpicks or kitchen twine.
Step 6
Heat butter and oil in a cast iron skillet or other oven safe pan.
Step 7
Sear steak roll on all sides
Step 8
Put steak roll into the preheated oven for 7-10 minutes depending on desired doneness. I cooked to medium rare

Once steak reaches desired temp, remove it from oven, transfer steak roll to cutting board and tent with foil. Let rest 5-10 minutes

Garlic Parmesan couscous

Step 10
While steak is resting, melt butter in a small saucepan.
Step 11
Add minced garlic and allow to sauté for about 60 seconds.
Step 12
Add chicken broth to garlic and butter, bring to a boil.
Step 13
Add in couscous and salt, stir to combine. Turn off the heat and put a lid on the pan. The couscous should be done in about 6 minutes.
Step 14
Remove lid after 6 minutes and add Parmesan, stir until cheese is melted. Taste for seasonings, adjust to your liking.

Serving

After finished resting, slice the steak roll into 1 inch rounds. Be careful to remove any toothpicks or twine. Serve alongside couscous and any veggies (we had salad) you like. So good and so impressive looking for how easy it is
