Oven-Baked Chicken Nuggets

Chicken nuggets are easy to make and much healthier than restaurant or supermarket versions which typically have an energy density of around 2.5 calories per gram. These oven-baked nuggets are much lower in energy density and coupled with their high protein content they make a highly filling meal or snack. The nuggets can also be served with 250 g of sweet potato fries and the meal will still be high in protein. Panko breadcrumbs are used in this recipe however you can also make your own - 100 g of blitzed wholemeal bread makes about 45 g of breadcrumbs after baking for a few minutes.

Step 1
Put the breadcrumbs on a sheet of greaseproof paper on a baking tray then place in an oven preheated to 180 °C for 3 to 5 minutes. Shake the tray at the mid-point to ensure the breadcrumbs are evenly toasted. Once golden brown, transfer them to a bowl and add the onion and garlic powder, paprika, salt and pepper, mixing well. Cut the chicken into nugget size cubes then with some small tongues dip these cubes into a saucer containing two beaten eggs and the milk. Then dip the chicken cubes into the breadcrumbs making sure they are fully covered. Place the nuggets on greaseproof paper sprayed with a light oil and cook at 180°C for around 10 minutes before turning the nuggets over and cooking for a further 10 minutes. Makes around 18 nuggets.
