Instructions

Step 1
Preheat your oven to 425°F (220°C).
Step 2
In a mixing bowl, combine eggs, ground beef, stuffing mix, water, and tomato ketchup. Mix thoroughly.

Form the mixture into mini meatloaves and place them on a sheet pan lined with parchment paper. Brush each meatloaf with bbq sauce.

In a separate bowl, toss diced potatoes with olive oil, garlic powder, onion powder, salt, and pepper.

Spread the seasoned potatoes on the same sheet pan around the mini meatloaves.

Bake in the preheated oven for 25 minutes, or until the meatloaves are cooked through and the potatoes are golden and crispy.

While the meatloaves and potatoes are baking, prepare the broccoli by tossing it with olive oil, salt, pepper, and garlic powder.

After the first 10 minutes of baking, add the seasoned broccoli to the sheet pan, or another pan if you need more room, and bake for an additional 15 minutes.
