Prepare the mixture

In a pan, heat the water over medium-low heat until it begins to boil. Add the salt and dissolve well.

Sift the oat flour into the water. Any oat flakes that did not blend well can be saved for another recipe or discarded.
Step 4
Lower the heat a bit and start incorporating the flour into the water with a spatula, preferably silicone. Mix until it begins to thicken.
Step 5
The mixture will start to form a dough-like consistency. Keep stirring, and when it is no longer sticky in the pan, turn off the heat.

Let it cool down so you can knead it a bit.
Knead the dough
Step 7
Once rested, spray oil on the surface you will use for kneading or simply use parchment paper. Either option works. Spray a little oil on your hands as well and knead for a few minutes. This helps make the tortillas soft and allows them to puff up when cooking.

After kneading for about 2 to 3 minutes, form a cylinder with the dough, as even as possible, but not too thin. Cut the cylinder into 4 equal parts to make 4 tortillas.

Make balls with each portion and place them on a plate covered with a towel to prevent the dough from drying out.
Shape the tortillas

Once the dough balls are ready, cut the parchment paper or plastic bag into two large pieces to cover the tortilla on both sides.

Spray oil on both pieces of parchment paper and flatten your dough balls between them using a plate and then a rolling pin. Stretch until the dough forms a thin tortilla. It should not be too thick, or it will not fold easily.
Cook the tortillas

In a medium-high hot skillet or griddle over medium-high heat, cook the tortilla for about two minutes on each side. The cooking time may vary depending on the type of skillet or griddle you use. Start with one minute and keep an eye on it until it is cooked. If you let it toast too much, it will become hard. You’ll know it's too toasted if it doesn't fold easily when flipped. Once cooked, stack the tortillas on a plate and cover them with a cloth to keep them warm and soft.
