I think this may be the recipe of the soft gingerbread cookies I remember from Germany.

3 cupsall-purpose flour
1 teaspoonbaking powder
½ teaspoonbaking soda
¼ teaspoonsalt
1 tablespoonground ginger
1 ¾ teaspoonsground cinnamon
¼ teaspoonground cloves
¼ teaspoonground nutmeg
½ cupunsalted butter
softened
¾ cupbrown sugar
1egg

½ cupmolasses
2 teaspoonsvanilla extract
1 teaspoonlemon zest
For the icing
Instructions
Step 1
In a large bowl, with together, flour, baking powder, baking soda, salt, ginger, cinnamon, cloves, and nutmeg
Step 2
In another bowl, cream together, the butter and brown sugar until light and fluffy. Beaten the egg, molasses, vanilla extract, and lemon zest.
Step 3
Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
Step 4
Divide the dough in half, wrap in plastic, and chill in the refrigerator for at least two hours.
Step 5
Preheat oven to 350°F. Line baking sheets with parchment paper.
Step 6
On a flowered surface, roll out one portion of the dough to 1/4 inch thickness. Cut into desired shapes using cookie cutters. Place the cookies on prepared baking sheets and bake for 10 to 12 minutes or until firm.
Step 7
Let cookies cool on the baking sheet for five minutes then transfer to a wire rack to cool completely.
Step 8
For the icing, mix, confectioners, sugar, and milk until smooth. Drizzle over the cooled cookies. Let icing set before serving.
