Instructions

Step 1
Pat the beef short ribs dry with a paper towel to absorb any excess moisture. Then season the meat all over with 1 tsp salt and 1/4 tsp black pepper.
Step 2
Heat a large skillet over medium-high heat. Sear the short ribs on all sides until browned and caramelized, about 5 minutes total.
Step 3
Transfer the seared beef short ribs to a slow cooker.
Step 4
Add the onion, carrot, and celery to the skillet. Season with 1/4 tsp salt, and add the thyme and bay leaf.
Step 5
Cook over medium heat, stirring occasionally, until the vegetables are softened, about 5 minutes.
Step 6
Deglaze the pan with the red wine, scraping up any browned bits from the bottom of the pan.
Step 7
Bring to a simmer, then add the mixture to the slow cooker.
Step 8
Pour the beef broth, Worcestershire sauce, garlic powder, and onion powder into the slow cooker and stir together.

Cover the slow cooker and cook on low for 6-8 hours, until the meat is tender and falling off the bone.

Remove the bay leaves and serve over mashed potatoes, rice, or pasta.
