Soy walnut crumble
A crumble with soy granules, walnuts and besan.
The soy walnut combination is very unique and hearty. The key is cooking the soy right and roasting walnuts.

She made it as a kebab but I couldn’t. Then I decided to change it into a curry. And AJ liked it!

Instructions
Step 1
Boil water and soak soy granules for 20 min
Step 2
Add poha at the end and leave it for a couple more min
Step 3
Squeeze and grind them to a coarse texture
Step 4
Roast walnuts and grind
Step 5
Mix ground walnuts with soy mixture and besan
Step 6
Keep roasting the mixture until it starts looking charred
Step 7
Separately, heat ghee and add cumin
Step 8
Add ginger paste and cook for a min more
Step 9
Add tomatoes and roast until oil separates
Step 10
Add all spices
Step 11
Add cooked soy walnut crumble
Step 12
Cook for 5-7 min more, add coriander leaves and serve!
