1 x 1 lbcan whole sweet potatoes
halved length wise

1 ¼ cupsbrown sugar

1 ½ Tbspcorn starch

¼ tspsalt

⅛ tspcinnamon

1 x 1 lbcan apricots

2 Tbspbutter

1 cuppecan halves

1 tsporange peel
shredded
Instructions
Step 1
Place sweet potatoes in greased 10x6x1 1/2 in baking dish. In saucepan, combine brown sugar, corn starch, salt, cinnamon, and orange peel
Step 2
Drain apricots, reserving syrup.
Step 3
Stir 1 cup apricot syrup into corn starch mixture. Cook and stir over medium heat until boiling. Boil for 2 minutes.
Step 4
Add apricots, butter, pecans. Pour over sweet potatoes.
Step 5
Bake uncovered at 275 degrees for 25 minutes
Step 6
Note: you may use fresh sweet potatoes (3-4) boiled until medium soft.
