Instructions
Step 1
Dehead the cauliflower into florets, roughly the same size
Step 2
Arrange evenly the florets on a baking tray. Sprinkle salt, pepper, chili flakes, cinnamon, cumin, paprika, ginger powders. Drizzle olive oil. Mix around for everything to be fully coated
Step 3
Bake at 200 C for 30 minutes

Cut up the chilli pepper, dice onion, and roughly chop garlic.
Step 5
Heat up pot. Drizzle oil. Saute onions until changed a little color. Sprinkle salt to draw out more moisture. Add chilli pepper and garlic. Sprinkle with salt, pepper, chili flakes, cinnamon, cumin, paprika, ginger, and turmeric powders.
Step 6
Once roast off, deglaze with white wine. Once alcohol evaporates, add 1 liter of chicken stock and a bay leaf.
Step 7
Simmer. Remove bay leaf at end of simmering.
Step 8
Add cauliflower to blender. Spoon in the sauce until the perfect consistency. Place back into the pot. Season to taste. Plate with Sprinkle of chives or parsley.
