Instructions
Step 1
In a large bowl, heat buttermilk so that it comes to room temperate
Step 2
Add melted butter and beaten egg yolks
Step 3
In a separate bowl combine and whisk dry ingredients
Step 4
Add the dry ingredients into the buttermilk mixture and mix until half combined
Step 5
Add egg whites and mix until the flour just just coated and mixed. Don't overmix, lumps are ok
Step 6
Rest for 10-15 minutes
Step 7
Preheat cast iron skillet so that it will be an even low heat. Lightly butter before adding pancakes
Step 8
Cook about 1/3 cup batter per pancake on low flame. Flip when bubbles appear and start to form on the top and cook on the remaining side
