Popiah Wonton Tostadas

Popiah (Malaysian Fresh Spring Rolls) but in a different form - a great dinner party starter or what to do when you have leftover popiah filling!! Cooked Vegetables on top of a crispy crunchy fried wonton wrapper and topped with fresh herbs, crispy shallots, peanuts, chilli and hoisin sauce.

Instructions

Fry Your Wonton Wrappers

Step 1
In a large pot, heat a few inches of oil to 180ºC. Fry a few wonton wrappers at a time (careful to watch they font fold over while frying) and don't crowd the pan. Fry for a few minutes until golden brown and then drain on some paper towel.

Fried Tofu

Step 2
Crumble the firm tofu and fry in the oil, season with a little salt then set aside to cool slightly.

Veggie Filling

Step 3
Heat oil and fry garlic for 30 seconds. Add carrot and jicama, salt, sugar, white pepper and sesame oil and cook for a few minutes until jicama is slightly soft. Taste and season if needed, adjusting to your preference. Set aside.

Assembly

Step 4
Place wonton wrappers on a large platter. Scatter some chopped lettuce on top of each. Place a small amount of veggie filling in the centre of each. Top with crumbled tofu and bean sprouts. Drizzle over hoisin, sriracha and sprinkle on crushed peanuts, crispy shallots, coriander and chilli. Serve immediately!
